We had breakfast at the hostel which was a new experience for most: cheese, and cold cuts are big breakfast items here. There's breakfast cereal but apparently it is eaten from very shallow bowls. There's toast and jelly, and the consensus is that the butter here is seriously better than the American variety. We then went to the school, and the students were divided into groups for their projects with the Icelandic kids. We won't spend a lot of time describing the projects yet because the students will present them all as something of a surprise to each other on Wed. We can definitely say that everyone came back happy and better friends with their hosts. Everyone had a bit of a break and then got ready to go singly to their host homes for dinner. Back fed and happy by eleven-ish we heard about many lamb dinners where the hosts were trying to fix traditional Icelandic dishes and also heard reports of veggie burgers and chicken nuggets.
Wednesday will be a big day, as we plan a trip to the most geologically active area of Iceland. We expect to see hot springs, geysers, and be able to actually stand with one foot on each of the two major tectonic plates in this hemisphere. We will see Lake Myvatn and will finish up the day with a big buffet dinner with our hosts.
